Speed increases your outright top velocity, which matters most on long, open stretches. Acceleration determines how quickly you reach that top speed, which is critical on tracks with many tight corners. Handling improves cornering grip and reduces stopping distances, which directly affects how cleanly you can take bends without losing momentum. Choosing where to put your upgrade points is a real decision with real consequences on your lap times.
